A Couple of Great Recipes...
B.C. Coastal Grilling Planks are 5/8" thick which is great for any type of food but necessary for thicker cuts of seafood, poultry and meats. By following our instructions and recommendations, you should get more than one use and in some cases 3-4 on your barbeque and multiple uses in your oven.
Preparation For Barbeque and Oven use:
Soak the grilling or oven plank for 2-6 hours (overnight if planning ahead) before cooking. You may soak your planks in water or any liquid of your choice. Completely submerge the planks in the liquid. You can use a clean brick to weigh them down. (we like to use a 4 litre milk jug filled with water.) Rinse well with clean water when ready to cook.
For BBQ Use:
- Preheat your BBQ for 5 minutes on medium-high heat. Place your rubbed or marinated food on the plank. (For fish, skin side down)
- For BBQing, put your planked food on one side of your grill and continue heating the barbeque for another 5 minutes.
- After the 5 minutes, turn the side your plank is cooking on, down to low and turn the other burner down to medium and close the lid.
- The plank should crackle & smolder. This creates the smoke for the smoky flavour!
- Keep a spray bottle handy to spritz out flames, you want your plank smoldering, not flaming. Keep the lid closed as much as possible to keep in smoke.
- Continue cooking until food is done. (About double the cooking time of non planked food.)
- For steak or meat, flip food on plank half way through cooking and when done, and for appearance, just before plating, sear the meat quickly on each side, on the grill.
- Clean your planks in light soapy water and rinse really well. Place in a 350 degree oven for 15 minutes and when cooled, store upright. Re-soak when ready to use again.
For OVEN Use:
- Preheat your oven to 400 degrees F.
- Lightly oil the side of the plank you are cooking on. (drip edge side. )
- Put your marinated or rubbed food on the plank and then into the oven and turn down to 350 degrees F. (RACK SHOULD BE IN THE MIDDLE) continue cooking until done. (About double the cooking time.)
- Clean your planks in light soapy water and rinse really well. Place in a 350 degree oven for 15 minutes and when cooled, store upright. Re-soak when ready to use again.
***CAUTION!***
- Please take care when lifting the lid of your barbeque or opening your oven to check on your food. Smoke will billow out and so you must keep your eyes protected.
- Always keep a spritzer filled with WATER when planking on barbeque .
- Keep a plate or tin foil ready for the hot plank when it comes off the barbeque or from the oven, the bottom is EXTREMELY HOT!
