Our New Head Chef, New Spring Menu & Easter News
"Keeping it local, seasonal, fresh & sustainable" has been Edible Canada's bottom line for years. And our new Chef de Cuisine, Albert Tran, will continue to showcase and incorporate approachable yet diverse ingredients grown on our bountiful lands into Edible Canada's new menu.
We're also excited to share with you that our spring menu has just launched; opening minds and mouths to different cultural perspectives and sustainable eating while paying homage to the finest selection of ingredients that BC has to offer!
CHEF DE CUISINE: ALBERT TRAN
We are thrilled to announce the appointment of our new Chef de Cuisine, Albert Tran. He's joining us from Sonora Resort, located on one of British Columbia's pristine Coastal Islands. His experience spans from modern Japanese in Ottawa and Spanish influences in Montreal to contemporary French and regional seafood inspired cuisine at the Marina in Victoria.
Working with the freshest local, seasonal, and sustainable ingredients of BC and preparing freshly caught spot prawns, urchin, crab, sturgeon, and salmon directly from the ocean outside the kitchen doors, gave Albert a perspective he continued to be inspired by while creating Edible Canada's unique and delicious new menu items.
This month, Albert and the team, are launching our Spring Menu, highlighting local producers and ingredients as well as influences from Eric Pateman's, President & Founder of Edible Canada, culinary travels.
PLANT-BASED, CANADIAN SEAFOOD & MEAT
Canada is a mosaic of flavours, ingredients, and people. Our brunch/lunch, and dinner menu is designed to showcase all of these.
Our spring menu includes elevated versions of Edible Canada's staple dishes including its famous poutine, gluten-free Arctic char fish & chips, and rhubarb mascarpone French toast. For the new spring menu, we will be serving 1/3 plant-based, 1/3 wild Canadian seafood, and 1/3 meat & game dishes.
New menu highlights include fried duck eggs, smoked meat sandwich, Quebec duck tartar, pork cheeks & waffle, sturgeon brandade, Westcoast shrimp & crab roll, textures of beets, ricotta gnudi, and many more mouthwatering dishes.
We are a dietary-restriction accommodating restaurant! Many of our menu items are plant-based, gluten-free or can be made gluten-free if requested.

This Easter long weekend, indulge in our Family Style Easter Brunch and get your hands on artisanal treats in our retail store on Granville Island!
FAMILY STYLE EASTER BRUNCH $85
The Family Style Easter Spread will feed 4 or 2 very, very hungry people. You can indulge in: boar belly, red wine braised pork cheeks, grilled bavette, chimichurri, pork chicharrón, peas and goat cheese skillet eggs, crispy mini Yukon potatoes with fresh herbs, organic greens with shaved seasonal vegetables, fresh Terra bread & house-made maple doughnuts for dessert.
EASTER COCKTAIL $10
And if you need a little caffeine burst, try our Black Russian with Spirit Bear expresso vodka, Baileys and a coffee ice cube.
APRIL IS BC WINE MONTH
In celebration of BC Wine Month, we are offering 50% off all bottles of wine during the Easter long weekend. Our wine list contemplates the best from BC microregions covering the crisp acidity from the wines born in Vancouver Island and reaching the bold and rich reds from the warmer Similkameen Valley.
